Thrifty Thursday: 2 Minute Raw Food ~Tomato Bisque Soup
I was thinking about what to share with you today and the idea came to me the day before when I was able to use my leftovers from my raw food dinner for lunch the next day.
It’s supposed to be summer at the moment, right? You wouldn’t know that if you lived in Chicago. Brrrr…it was cold! All I kept thinking was that I wanted some soup. Some good soup. Mmmmm…tomato bisque. But how can I make that in a raw food way?
Inspiration struck!
I ended up just using a few ingredients I had in abundance at home. I also added a serving of wild rice from last night’s dinner so that nothing goes to waste. So yummy!
Here’s the thrifty recipe for my (nearly all) raw tomato bisque and wild rice soup that took less than two minutes to complete. Below are the ingredients you will need:
- ¼ cup of coconut milk
- ¼ cup of regular milk (you can use coconut milk, water, or nut milk you make yourself with no added sugar)
- ½ cup of (cooked) wild rice (there is a way for you to “sprout” it, but I haven’t had success doing it yet)
- ½ cup of sprouted cashews
- 1 large roma tomato (cut up into eight pieces)
- garlic and onion powder to taste (if you aren’t sure, start with ¼ of a teaspoon and then work up slowly from there)
- sea salt (just a pinch)
- Italian seasonings (if you aren’t sure, start with ¼ of a teaspoon and then work up slowly from there)
Below are the directions:
- Combine the coconut milk and regular milk in a saucepan. Put it on high. While you are warming this up, put the other ingredients (except the wild rice) in a blender (I use the Magic Bullet). Don’t blend it yet.
- What you want out of the milk mixture is to just warm it up a bit. Think room temperature. Do not let it get to the boiling point. You want to keep it as raw as possible. It was less than 30 seconds in my saucepan to get it to the temperature I wanted.
- Once the milk is ready, put that in the blender.
- Blend together until it’s creamy. In the Magic Bullet it was perfect in about 30 seconds.
- Taste the mixture to see if you have the right balance of seasonings for your taste. Adjust if necessary. Re-blend, but don’t over blend. You just want to incorporate the seasonings.
- Once you have the soup part ready, put it into a bowl and then add your wild rice (I like to take out the rice earlier so that it comes to room temperature to avoid cooking it again).
- Mix together and enjoy!
This was so easy! And in less than two minutes I had everything organized and in my pretty bowl.
I know. I should have taken a picture. But I was so hungry and it was so pretty that I started to eat it. You know how that is!
