60 second Southwestern Spicy Tomato Soup for about 50 cents a serving

So far so good on our $500 a month to feed 4-5 people project. Wanted to give you a quick post about one of our fave foods:

One of our favorite staples in our house is this simple and quick recipe. I pop everything into a food processor (you can easily do it in your blender) and it’s done in under 60 seconds. Feeds four:

  • 1 can of diced tomato (14 oz or so ~ the whole thing; including the water)
  • 1 can of any white beans (15 oz or so ~ the whole thing; including the water)
  • 2 cups of chicken broth
  • 7 slices of jalepeno from a jar
  • Spice to taste (I use Adobo ~ my catch all ~ and a bit more of onion and garlic powder if I’m in the mood)


Blend it all together and you are done!

I love this recipe because we can either eat a double helping to make a meal or serve it with a salad for four and still feel very satisfied. Since every bean has it’s own texture and taste you can even eat this quite frequently and change up the flavor by changing up the bean.

We purposefully don’t heat it up because we are like eating our food that way. But feel free to mix and warm it up in a pot.

Simple and nutritious. Best part? You can make a bigger batch and freeze what you aren’t using in individual servings so that the next time you want it, it’s done!
